Ingredients:
1/4 cup cassava flour or tapioca starch
1/4 tsp baking powder
1.5 oz bag of original or falafel Splitz pounded to breadcrumbs
2 & 1/2 tablespoons sparkling water (and more if necessary)
1 medium head cauliflower
Spray cooking oil (such as 100% avocado)
What To Do:
1. Preheat oven to 350F and line a baking pan with parchment sheet.
2. Break the cauliflower into florets, and lightly steam until still very firm, but slightly tender.
3. In a medium bowl, add the cassava flour or starch, the baking powder, and the sparkling water. Pour about half the pounded bag of Splitz into the slurry and mix well. it should be about the consistency of pancake batter. If the slurry becomes too thick, add a tablespoon or two more of sparkling water.
4. Dunk each floret into the slurry, coating well, and spread out with space between on the baking pan spray lightly with cooking oil. Then sprinkle with remaining Splitz.
5. Bake for about 20 to 30 minutes until lightly golden brown. Serve with tzatziki sauce, green goddess dressing, or other favorite savory dip.
